@ryanealon: soup season has arrived! Been having so much fun in the kitchen recently and this soup was SO dang good! I went to the market the other day and picked up a bunch of veggies and KNEW that I wanted to take a stab at a potato and leek soup. I made this soup completely plant based and it was still super creamy and smooth—ingredients below 😌🫶🏻 INGREDIENTS: 4 leeks 10 fingerling potatoes (would also recommend Yukon gold if you have them lying around—would use 4) 1 onion 3 garlic cloves A handful of parsley 2 boxes of vegetable broth A knob of vegan butter (I use earth balance) 2 tbsp olive oil 2 thyme sprigs & 2 bay leaves (fish out before blending) 1/2 cup- 1 cup of Oatly oat milk Season with Salt, Pepper, Garlic Powder, and Onion Powder to taste Chives for garnish #veganrecipes #cooking #soup
