Pumpkin cream cheese muffins🧡🍂☕️                                                                               Recipe:                                                                                       Ingredients  Muffins  -1 2/3 cups all-purpose flour (200g) -1 tsp baking powder  -1 tsp baking soda -1 tsp pumpkin pie spice -1/4 tsp salt  -1/4 cup unsalted butter, melted and cooled (57g) -3/4 cup granulated sugar (148g) -1 1/2 cups pumpkin purée (368g) -1 egg, room temperature -1 1/2 tsp vanilla  -pumpkin seeds  Cream Cheese Filling  -8oz cream cheese, softened (226g) -1/4 cup granulated sugar (50g) -2 tsp all-purpose flour  -2 tsp milk -1 tsp vanilla  -Pinch of salt  Instructions  For the muffins: 1. Preheat oven to 350°F. 2. In a medium bowl whisk together flour, baking powder, baking soda, pumpkin pie spice, and salt. Set aside. 3. In a large bowl add the melted butter and sugar. Mix until combined. 4. Add pumpkin purée, egg, and vanilla. Mix until combined.  5. Fold in the dry ingredients into the wet ingredients until just combined. For the cream cheese filling: 1. In a medium bowl add cream cheese, sugar, flour, milk, vanilla, and a pinch of salt. Mix until combined. 2. Add the filling to a piping bag or ziploc bag and cut the tip off. Assembly: 1. Evenly scoop the muffin batter into a lined muffin tin.  2. Insert the piping bag with the cream cheese filling about 3/4 of the way into the batter and squeeze the filling slowly as you reach the top. Move the piping bag in a circular motion once you reach the top of the batter. 3. Sprinkle pumpkin seeds around the cream cheese filling.  4. Bake for 15-20 minutes for regular sized muffins.
