Preheat 350°F. Line 3 pans. 2. Whisk dry. 3. Whisk wet until emulsified. 4. Combine just until smooth. 5. Divide. 6. Bake 22-25 min. 7. Cool, wrap, chill. Brownie Squares * 100 g (1/2 cup, packed) brown sugar * 50 g (1/4 cup) sugar * 90 g (6 tbsp) butter * 60 g (1/2 cup) Dutch cocoa * 120 g (1 cup) AP flour * 2–3 tbsp heavy cream * 1 tsp vanilla bean paste * 1/2 tsp fine sea salt * 70 g (1/2 cup) chocolate chips Instructions 1. Cream butter + sugars. 2. Add cocoa, flour, salt. 3. Add vanilla + cream. 4. Fold in chocolate. 5. Press into pan & chill Chocolate Buttercream * 339 g (1 1/2 cups) butter * 510 g (4 1/2 cups) powdered sugar * 68 g (1/2 cup + 1 tbsp) Dutch powder * Pinch of salt * 2 tsp vanilla bean paste * 50–80 g heavy cream Instructions 1. Beat butter. 2. Add sugar, cocoa, salt, vanilla. Whip until fluffy. 3. Stream in cream, mix on low until light and silky.
