We will produce approximately 14,000 napolitain pieces of finished chocolate from that amount of beans 🫘😋 In this video, the large rotating fan is actually cooling down the beans after they roast. If you don’t cool them down, they continue to retain their heat and consequently continue to roast - but over roasting can ruin a whole batch of cacao beans!
