Grind finely. Place the finely ground cookie dough in a springform/baking pan lined with parchment paper. Press it firmly. Heat the whipping cream. Add the pieces of white chocolate and let them sit for 1 minute. Mix until smooth and let it cool. Transfer the white chocolate ganache to a piping bag. Make holes in the cookie dough, but not too deep. Use the back of a chopstick or another round object. Fill the holes with the ganache. In a deep bowl, combine the heavy cream, vanilla sugar, and stabilizer. Mix until stiff. Spread the whipped cream over the cookie dough, creating a smooth layer. Pipe lines of white chocolate ganache on top and sprinkle the entire surface with shredded coconut for a for the finishing touch.
