Do you prefer crimp pex over uponor? Ive always been told to stay away from it. Granted if that’s what you got to work with then that’s what you’ve got but what are your thoughts?

Clean repair, better to install the escutcheon and angle stop after drywall but like you stated they wanted it live and working.

isn't foster pex for boilers. why would it be used for domestic water? why would you need oxygen barrier on domestic water?
