Lo & behold, the perfect Chicken Pot Pie!! Sinfully easy and absolutely delectable. I don’t know about you guys, but I personally can eat this whole thing by myself (not in one sitting, but I won’t get tired of having it for lunch and dinner 🙈😅) Servings: 1 9” pie Time: 1.5 hours  Ingredients: - 2 tbsp olive oil  - 4 tbsp butter - 1/2 onion finely chopped  - 1-2 tbsp minced garlic - 4 tbsp flour - 2 cups milk - 1 tsp each salt, pepper, chilli flakes and oregano (or to taste) - 3/4 cup shredded mozzarella cheese (optional) - 2 cups cooked shredded chicken  - 1 1/2 cup chopped frozen veggies of choice (I like corn, carrots and peas) Crust: - 2 2/3 cups flour  - 1 cup butter, cold & cubed - 2 tsp sugar  - 1 tsp salt - 4-5 tbsp ice cold water - Egg wash Method: - Make pie dough by crumbing butter into the dry ingredients and then adding water and mixing until the dough starts to come together. Place in the fridge - Preheat oven to 400F and brush a 9” pie dish with butter  - Heat oil and butter in a nonstick pan over medium heat. Sauté onion until translucent, then add garlic and sauté for a min  - Add flour and milk and cook while stirring until thick and creamy - Add spices and cook for a min. Then turn off heat and add chicken, veggies and cheese. Mix and set aside - Take pie dough from the fridge and divide into 2. Roll it out and then fold it in half, repeat 2-3 times. This will create lamination in the dough - Then roll out into a large sheet and cover your pan with it. Prick with a fork, and fill with the filling - Roll out the other half of the dough following the same method and cover the pie. Pinch together the edges and make a crimping pattern using a fork - Brush generously with egg wash - Bake for 30 min until the pie looks nicely golden and crispy.
