@herbifoods: Crispy ricepaper dumplings 🔥🌱 ⠀ A fun and easy way to make dumplings at home. ⠀ RECIPE (8 dumplings) - 8-16 sheets ricepaper - oil to fry - 200 g mushrooms of choice - 1 tbsp soy sauce - 200 g smoked tofu (or regular firm tofu) - a few leaves of cabbage - 1-2 carrots - 4 scallions (or Chinese chives) - 2 garlic cloves - small piece of ginger - 1 tbsp toasted sesame oil - salt & pepper ⠀ Dipping sauce: - 1-2 tbsp soy sauce - 2 tsp rice vinegar - 1 tsp maple syrup - 1 tsp sesame oil - 1 tsp gochujang - splash of water ⠀ ❶ Sauté mushrooms until most of the water has evaporated and they have got some color. Deglaze with soy sauce and set aside. ❷ Optionally sauté veggies and tofu for a couple of minutes. Alternatively you can chop everything very finely and leave it raw. ❸ Combine all ingredients for the filling in a bowl and season to taste. ❹ Dip ricepaper into water for 5 seconds. Place 2-3 tbsp filling in the middle and close the sides. If frying, wrap in another sheet of ricepaper to prevent from falling apart. ❺ Bake at 200°C for 15-20 minutes, turning on the broiler for the last 2-3 minutes or fry in a little bit of oil until crispy.
