Heat cream, milk, glucose, and vanilla. 2. Caramelize 190 g of sugar to 365°F (185°C). 3. Add the milk and cream mixture to the caramel with a pinch of salt. 4. Mix and boil until it reaches 221°F (105°C). 5. Filter and cool to 158°F (70°C). 6. Add butter and blend with a mini beamer. 7. Let it cool completely.
