And the best taste of home INGREDIENTS * 1.5 lbs swai fish (available at an Asian market or substitute with cod/halibut or tilapia) * 1 tbsp fish sauce * 1/2 tbsp soy sauce * 1/2 tbsp chili crunch/or whole chili (optional) * 1 tbsp brown sugar * 1 cup coconut water * Salt & pepper to taste * 1 shallot * 4 garlic cloves * Green onion to garnish INSTRUCTIONS 1️⃣ Clean the fish with vinegar ginger, or lemon. Rinse with water and pat dry. 2️⃣ Marinate the cleaned fish with fish sauce, soy sauce, garlic, shallots, and chili. 3️⃣ Heat up the pan, add sugar and water, and let it caramelize in 3 minutes until you see the bubbles (I don't use oil because swai fish is already fatty; if you use other lean fish, you might need to add oil). 4️⃣ Add the marinated fish into the pan, sear both sides until you see the caramel color. Add coconut water and lower the heat, simmer for 10 minutes. 5️⃣ Top with green onion and black pepper.
