There’s only 8 seats available and they have a total of 4 time slots every Wednesday through Sunday. The highest quality ingredients are sourced from 19 farm-to-tables within Italy and Japan. The dough is made with five types of organic flour with a 80% hydration then fermented for 48 hours.
