Pie crusts & pop tarts. In a food processor or blender, add 2 1/2 cups of all purpose flour and 1/2 tsp salt. Pulse a few times, then add 20 (yes, 20) tbsp of unsalted butter. Pulse until it becomes crumbly, then add 6-8 tbsp ice cold water - making sure to not add too much water. Pulse until the dough comes together. Once the dough has come together, remove and divide in two. Form each dough into a ball, flatten into a disc, and wrap in Saran Wrap. Place in the fridge for at least an hour OR in the freezer. Each disc makes one - 9in pie. Now let’s turn pie crusts into pop tarts. Roll the dough into a rectangle until it’s a 1/4 in thick. After your dough is rolled, slice into whatever size you desire - I did roughly 3x5. Take a spoonful of either jam or jelly and add to your dough. Add a little bit of water to your edges to help seal, place the top of the dough over your filling, crimp the edges, and poke a few holes on top. Add a little bit of melted butter to the top, then bake at 375 for 20-25 minutes or until they’re golden. While the pop tarts cool, make the frosting. In a small bowl, add 1/2 cup powdered sugar, 1 tbsp milk, and a splash of vanilla extract. Mix then spread on top of the pop tarts.
