@fascinatedbyfungi: Wishing everyone a happy #FungusFriday from this massive #Matsutake #Tricholomamurillianum, a mycorrhizal mushroom that I find growing in association with Tan Oak trees. These are incredibly solid meaty mushrooms with a unique floral seafood spice aroma. I love cutting these up because of the squeaky noises they make as the knife goes through them. I’ve been experimenting with different methods for cooking these, but one of my favorites is to tempura fry them til crispy. I fried these up along with some fish and served them up with kewpie mayo and a dashi dipping sauce.
