@pcosibsdietitianlenny: I saved some eggplants from the rats out of my garden this week so I decided to create this yummy dish with it. It was honestly super easy to make and really yummy! you'll need: 2-3 eggplants (dependend on size) 1 onion 500 grams of lean mince 3 small potatoes 2 cans of diced tomatoes 2 gloves of garlic cinnamon oregano 2 tablespoons of yogurt 2 eggs handful of cheese instructions: 1. slice up the eggplants and put in a tray with baking paper to grill 20 minutes on 180 degrees 2. slice op potatoes and layer in the oven dish. Put in the oven for 20 mins as well. 3. in the meanwhile dice an onion and start frying with some oil 4. add mince meat (or soy mince if you're vego) and fry till browned up 4. add the cans of diced tomatoes and give a good stir. add some water of needed. 5. crush the garlic and add to the sauce 6. add cinnamon and oregano to flavour and add salt if desired. 7. mix two eggs with the yogurt 8. Take oven dish and eggplants out of the oven. Leave potatoes in the dish and create another layer of grilled eggplant on top. Layer with all the thickened sauce. Add another layer of eggplant. Pour the egg yogurt mixture in top. Finish off with handfull of cheese. 9.
