@foodwithgeorge: AD Lamb Shakshuka with Apetina white cheese

This dish is the perfect opportunity to take one step towards a healthier lifestyle with Apetina. It’s great for sharing and the good thing about Shakshuka is that it can be enjoyed for breakfast, lunch and dinner.

Ingredients:

500g Lamb Mince
Apetina White Cheese 50% less fat (sprinkle on top)
100g Apetina Green Olives & Garlic in Oil
4 Eggs
2 tins of chopped tomatoes
2 tbsp Harrisa Pastę
1 tsp salt
1/2 tsp pepper
1 tsp ground coriander
1 tsp cumin
1/2 paprika
4 slices of sourdough
50g butter
handful of fresh coriander

Method:

Finely dice onions and garlic, then sauté them in a pan with a drizzle of olive oil. Once softened, add the harissa paste.
Introduce the chopped tomatoes and let the mixture simmer for a couple of minutes.
In a mixing bowl, combine lamb mince with salt, pepper, ground coriander, cumin, and paprika, using your hands to thoroughly mix.
Shape small, bite-sized portions of the mince and evenly arrange them in the pan then even scatter the Apetina Green Olives & Garlic in Oil. Cover and cook for a few minutes until fully cooked.
Using a spoon, make small wells in the mixture and carefully crack eggs into them. Cover with a lid for a minute or so until the eggs are cooked to your liking
Over the top of the Shakshuka crumble Apetina white cheese and chopped coriander and serve with buttered toasted sourdough.
Serve the dish directly in the pan, placing it on a trivet in the centre of the table for everyone to enjoy with friends and family.
