Notes: Quite a giant cake for the wow effect. It is best served for multiple people or divided into smaller versions down to 2-4 portions. Notably, biscuit base cakes go quickly soft and are best consumed within a day. That said, components can be made in advance and finished up to an hour on the day of serving. For the Base - 160g butter biscuits - 1tsp vanilla essence - 35g melted butter For the Mousse - 4 egg yolks - 80g of sugar - 30g of cornflour - 4.5 sheets of gelatine bloomed - 300g of milk - 130g finely chopped white chocolate - 300g of heavy cream (to be added later) - Vanilla bean split in half/deseeded The Side Garnish - 500g strawberries - 145g strawberry jam - 2 gelatine sheets bloomed Finishing Touches - 200g whipped heavy cream - 2 tbsp icing sugar - Remaining strawberries - Crushed remaining biscuits - Jam for decoration
