@tabithamy: broccoli & walnut pasta⭐️🥦 ingredients: broccoli chopped 1/2 courgette diced pancetta chopped walnuts tsp chilli flakes chopped basil garlic lemon pasta grated parmesan method: cook broccoli in a pan of boiling water until soft. Fry courgette and pancetta in a pan on medium heat until crispy. Add in your chopped walnuts, garlic, chilli flakes and zest of a lemon and cook for a further couple of mins. Remove from pan and set aside. Transfer your cooked broccoli from your water to your frying pan and keep on a low heat. It should crush down as you stir. Meanwhile cook your pasta in the remaining ‘broccoli’ water. Add a spoonful of pasta/broccoli water and the juice of a lemon to your frying pan with the broccoli. Stir until your broccoli has broken down into a thick sauce. Once your pasta is cooked, add to the sauce along with your pancetta/walnut mix.
