@heykarabae: Another rainy day means another lentil dinner 💚 Lentil ravioli with yogurt and tomato sauce For the dough (you most definitely can use store bought dough or gyoza wrappers) 1 1/2 cups of flour Pinch of salt and pepper Splash Olive oil Warm water to bring it together Lentil filling: 1 cup of soaked brown lentils 2 large yellow onions 1 jalapeño 2 garlic cloves 2 tablespoons tomato paste 1/2 cup Ricotta cheese Handful of parsley Sauté onion with salt and pepper in coconut oil until nice and tender and sweet. Then add jalapeño and garlic until soft. Add tomato paste and cook down for a few minutes and add soaked, washed lentils. Add water and salt and cook covered until softened. If the water dries out keep adding more until it’s cooked. Once soft uncover and cook until all of the moisture is gone. Let mixture cool and then add the ricotta and parsley adjust salt if needed. Refrigerate the mixture while you roll out the dough because the filling is a little soft. Fill your raviolis and boil them and if you use fresh dough it will cook in a few minutes. Top with garlic and tomato sauce. I make my tomato sauce by cooking tomato paste down with olive oil and thinning it out with water.
