Family dinner meal ideas  last year my partner and I moved her 83-year-old mom in with us to become her caregivers. She needs soft and low sodium food, so making dinner for the family became a little bit more complicated. It took me a little while, but I figured out how to make meals that met her dietary restrictions while still making meals that made the rest of the family happy. Here’s how I make noodle bowls, two versions! One for our elderly parents on a soft food, low salt, diet, and the other for the rest of the family My biggest trick to make it easy to throw together a meal is ingredient prepping like a restaurant at the beginning of the week. This means that I take an hour or two to prep ingredients. Starches, steamed vegetables, proteins, marinated eggs. It’s a little bit of work upfront, but it makes a huge difference to the rest of the week! For these noodles, I started with the broth. I can combined a chicken broth that I made and froze last week. To make the chicken broth, I combined leftover chicken bones, water, ginger, garlic, dried mushrooms, and leftover vegetable scraps. I brought it to a boil down to a simmer for about two hours. This makes an incredibly flavorful broth. And I didn’t add any sodium to it, which is perfect for our elderly parent. So today I added that to a pot. And then I added the marinade that I was marinating my chicken in. This helped to bring up the flavor. I had my chicken marinating and a combination of 2 tbsp soy sauce, 2 tbsp Mirin, 2 tbsp rice wine vinegar, 3 cloves garlic, 1 inch ginger, and 1 tbsp brown sugar, 1/2 cup water. I brought the broth to a boil down to a simmer and allowed to cook for about 20 minutes. Since our elderly parent needs low sodium, for her meal I just added a little bit of sesame oil at the end. But the rest of the family does not need to be sodium. So one of my tricks is adding a Ramen concentrate to give it more flavor. A little bit of a cheating move. But it works! I also added toasted sesame oil and chili oil to give the broth even more spice and flavor. As mentioned above, our other soft vegetables. But the rest of the family does not like mushy vegetables! I solve this problem by steaming batches of vegetables twice a week to add to meals. And then the rest of the families vegetables I air fry. I also air fried my marinated chicken. Such a simple way to cook chicken! I cooked it at 400° for about 15 minutes. But the time will vary depending on how thick the chicken is. I topped our meals off with marinated eggs. I have the recipe in one of my other videos if needed!
