after boiling and chopping it up, scruff up the edges before air frying so that it crisps up more and gets crunchier

Also you can soak them in sugar water for like 20-30 min to help draw out the starch, it makes them get crispy on the outside but soft and pillowy on the inside! Just make sure you adjust the cooking time
