I’m a big advocate for making something huge on Sunday to last for dinner for the next few weeks. It helps sooooo much at the end of the day when I can’t be bothered to sort out dinner. Yes, even though I cook for a career, dinner can still be a stressful part of my week 😅 my son has SENSITIVE taste buds 🙂🙂🙂🙂 Recipe 3 tbsp olive oil 1 carrot 1 onions 4 cloves of garlic 1 courghette 1 aubergine 1 x 400g lentils 1 handful of walnuts and sunflowers seeds mix, crushed Salt to taste 1.2kg tomato pasatta oregano Veg stock cube Black pepper Fresh basil (optional, my son is not a fan) 5 large potatoes (More or less depending on the size of your biggest tray!)
