What you need: 6-8 corn or flour tortillas 16 oz raw jumbo shrimp, peeled, deveined, tail off (fresh or frozen and thawed) 1 tsp garlic powder 1 tsp onion powder 1 tsp salt 1/2 tsp cumin 1/2 tsp chilli powder 1/2 tsp smoked paprika 1/2 tsp black pepper 1 tsp oil Avocado Crema 1 avocado 1/2 cup sour cream 1/2 cup cilantro leaves 2 garlic cloves 1/2 jalapeño, seeds removed (optional) 1/4 tsp salt, more to taste 1/4 tsp black pepper Juice from 1 lime 2-3 Tbs water to thin out the crema Purple cabbage slaw 1/2 medium purple cabbage, shredded 1/4 cup cilantro leaves, finely chopped 2 scallions, thinly sliced green & white parts 1/4 cup mayonnaise 1/4 cup sour cream 1 lime, juiced 1/4 tsp salt, more to taste 1/8 tsp black pepper Extras: Thinly sliced avocado Chopped cilantro 1. To a blender, add all the ingredients for the avocado crema. Blend until smooth, adjust the seasoning and add more water if needed. Transfer to a bowl and keep in the fridge until needed. 2. To a large bowl, add the shredded cabbage, chopped cilantro, sliced scallions, mayonnaise, sour cream, juice from one lime, salt and pepper. Toss everything together and adjust seasoning to your liking. Store in fridge until needed. 3. Rinse and pat dry the shrimp . Drizzle with the oil and season with garlic powder, onion powder, chili powder, cumin, smoked paprika, salt & black pepper. 4. To a non-stick skillet add 1 Tbs oil and 1/3 of the shrimp. Cook on medium-high heat for about 2 mins on each side. Took the rest of the shrimp in batches, don’t overcrowd. Remove from pan. 5. Warm up the tortillas on a skillet. To the tortilla add some purple cabbage slaw, a couple slices of avocado, 4-5 shrimps, drizzle avocado crema, and garnish with cilantro!
