Full Recipe! 1. Melt 2 tbsp butter and 2 tbsp flour together, then add 1/2 diced onion, salt, pepper, and Italian seasonings. Let cook for 5 minutes then add 2 cloves crushed garlic, 5 cups vegetable broth, and 1 cup cream. Bring to a boil. 2. Bring 1/2 box of lasagna noodles into pieces and add to the soup. Add 1 can rinsed cannellini beans and let cook until pasta is cooked through. Stir occasionally. 3. Mix in 2 tbsp pesto and 1 cup spinach. 4. Remove from heat and add 1/2 cup parmesan and 1/2 cup mozzarella. Serve with sun-dried tomatoes on top.
