WELCOME TO EGGS FROM AROUND THE WORLD 🍳🌍 welcome to eggs from around the world. my brand new mini series where I’ll be showing you how to make the best egg dishes the world has to offer.. this is episode 1 and today we are starting this series off with a trip to Mexico, to make Huevos Rancheros 🇲🇽. this egg dish is just makes you feel good. two corn tortillas are fried until crispy and then served with frijoles (beans) which is optional but it adds real flavour to this dish, aswell as a jalapeño & tomato salsa, queso mexicano (mexican cheese) and two rich yolk eggs. this one is a real treat and worth a try comment what I should make for episode 2  100g dried black beans soaked 12 hours 6 bay leaves 2 knorr chicken stock cubes 1 tbsp olive oil  2 jalapeno sliced 3 tomatoes diced 1 brown onion sliced 4 tbsp vegetable oil  2 free range eggs Corn tortillas (1) In a saucepan, combine the black beans, bay leaves and knorr stock cubes. Bring to a simmer, cover and cook for 1 hour. After an hour, remove the lid and simmer uncovered to thicken for 20 minutes, mash some of the beans to give it that texture. 
(2) Heat up some olive oil in a skillet, then add the onion, jalapeño and tomato. Season with salt and cook on a medium heat for 10 minutes until soft and the tomatoes have broken up. Reserve and set aside (3) Heat up 4 tbsp vegetable oil, then fry your corn tortillas for 1 minute until crispy, then place on a drying rack to dry. In the same oil, fry your eggs for 1 minute, basting the yolk with a spoon to achieve a sunny side egg. Remove and drain. Serve altogether with some cheese, coriander, beans and salsa, enjoy :) #huevosrancheros #mexicanfood #mexico #eggs #series #fyp
