I always mix until smooth and have never had chewy pancakes as a result. it takes a lot more mixing to develop that much gluten

It’s important to sift your dry ingredients before mixing. The main reason people overmix is wanting to avoid a lump of baking powder inside their pancakes

I saw online (after being confused by the first video!) that resting the lumpy pancake mix also helps hydrate the lumps without overmixing

Sadly, answering one questions creates others. 30 seconds extra will develop gluten in batter but bread dough MUST be aggressively kneaded for 10 min to do the same. Why?
