I always mix until smooth and have never had chewy pancakes as a result. it takes a lot more mixing to develop that much gluten

i did that until one of the lumps turned out to be a lump of baking powder. it did not dissolve and biting into it was a terrible surprise.

It’s important to sift your dry ingredients before mixing. The main reason people overmix is wanting to avoid a lump of baking powder inside their pancakes

I've eaten many a pancake where once the pancake was cooked, and I cut into it, there were pockets of dry ingredients. Studded all over. So what is a happy medium between lumpy and smooth?

Sadly, answering one questions creates others. 30 seconds extra will develop gluten in batter but bread dough MUST be aggressively kneaded for 10 min to do the same. Why?
