@jennnnaaayy: Curry Chicken! Such an easy mid week meal, especially when using a bbq chook! Ingredients: Bbq chook or cooked chicken 1 large brown onion (or 2 small) 2 carrots 1 cup frozen peas or frozen veg 2 tbspn garlic minced 2 tbspn tomato paste (1 x concentrated) 1-2 tbspn curry powder 2 tbspn flour (any kind) 2 cups chicken stock liquid 1 x 400g tins coconut milk Pinch of brown sugar Salt & Pepper to taste Method: Break up chook or cook your chicken Dice up veggies, set aside Cook onion, garlic & carrots Add in tomato paste & stir through Add flour & curry powder, mix to combine Add stock and turn down to medium heat Add pinch of brown sugar, salt & pepper Add in coconut milk Allow mixture to simmer for 10 mins Add any frozen veg at this point Prep rice or potatoes to side with Add in cooked chicken Add salt & pepper to taste Turn heat off and add lid until mash potatoes or rice is ready Dish up & enjoy 🥰 #Curry #Curriedchicken #Cooking #Dinner #Keenscurry #EasyRecipe #budget #frugal
