@lagomchef: Part 9 Brunchy Classics…bacon and egg bread roll! Now I can’t claim to have come up with this recipe it was @cookim_mama - I saw these fluffy buns and was like no way they are going to come out like that! The recipe calls for condensed milk, milk double cream… and I tell ya what they bloody worked! Amazing in fact!!! I filled mine with bacon and egg but obviously fill yours with whatever you have! I love and hate baking as I am not very precise with measuring but love what can be created from being a little bit loose. Anyway I have completely copied and pasted the ingredients and method from @Kim so you have some clear instructions instead of me just going.. mix some stuff, warm some stuff and bake! Last thing… this is what I love about cooking, I have been cooking professionally/semi professionally/peeling potatoes for well over 20 years and I have never NEVER heard of a Tangzhong before… I suppose it’s a bit like a bigga but still learning! Big Love M Main Dough Ingredients: 530g bread flour 240g whole milk 50g heavy cream 60g sweetened condensed milk 20g milk powder 1 large egg 6g instant yeast 8g salt 50g unsalted butter Tangzhong: 20g bread flour 100g whole milk 1. Place all tangzhong ingredients into a small pot. Whisk until no lumps remain. Stir continuously over medium heat until the mixture resembles mashed potatoes. Remove from heat 2. Add the tangzhong and all other ingredients except for butter to a mixer. Using the dough hook attachment, mix for 8-10 mins. Then add the butter and continue kneading for 8-10 mins. Dough should be tacky but manageable. 3. Shape the dough into a ball, place it into a large bowl, cover, and let rise for 1.5-2hrs or until it’s doubled in size. 4. Punch dough and divide it into equal sized pieces, shape into balls and place it into a lined tray. 6. Cover and let rise for 30mins-1hr or until almost doubled in size 7. Meanwhile, preheat the oven to 350F. Optional: dust the surface of the buns with some bread flour right before baking.
