If you‘re a tiramisu & banana bread lover hold on for a second and give this healthier TIRAMISU BANANA BREAD a try 🫶🏼 Ingredients for the batter: 120 unsalted butter, softened 50g of agave syrup 2 large eggs, room temperature 3 bananas, (very ripe) 0.5 tsp vanilla extract 190g all-purpose flour 1 tsp baking soda 2 tsp cinnamon 0.5 tsp salt For the coffee batter: half of the batter  one shot of espresso 2 tbsp of agave syrup For the top layer 3 tbsp of greek yogurt 2 tbsp of agave syrup 1 tbsp of cocoa powder 1. Preheat the oven to 180C. 2. In a bowl, mash the bananas and add eggs, butter, agave syrup a and vanilla. 3. To another bowl add flour, baking powder, cinnamon and salt. Add the egg mixture and mix well. 4. Now separate half of the batter into another bowl, add shot of espresso and agave syrup und mix until combined. 5. Line a cake pan with parchement paper. Add half of the light batter into the pan, next add the coffee flavor and then the rest of the light batter. Mix gently with a fork creating a marble texture. 6. Bake the banana bread for about 40-50 minutes at 180C or until a toothpick inserted into the center comes out clean. Let banana bread rest 10 min before transferring to a wire rack to cool.  7. Mix greek yogurt with agave syrup and set aside. 8. After the banana bread has cooled down completely, spread yogurt on top and sprinkle with cocoa powder.
