Gluten Free Pineapple Upside Down Cake 🍰 Ingredients: For the topping: 1/4 cup (4 tbsp) unsalted butter or dairy-free margarine, melted 1/2 cup packed light brown sugar 1 can (20 ounces) pineapple slices in syrup, drained (reserve syrup) Raspberries (optional) For the cake: 1 1/2 cups gluten-free all-purpose flour blend 1 tsp baking powder 1/2 tsp baking soda 1/4 tsp salt 1/2 cup unsalted butter or margarine, softened 3/4 cup granulated sugar 2 large eggs 1 tsp vanilla extract 1/2 cup of that pineapple syrup reserved from the canned pineapple Instructions: 1. Pour the cake batter over the pineapple slices in the pan, spreading it evenly. 9. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center of the cake comes out clean. 10. Allow the cake to cool in the pan for 10 minutes. Then, run a knife around the edges of the pan to loosen the cake. 11. Place a serving plate upside down on top of the cake pan, then carefully flip the pan and plate together to release the cake onto the serving plate. Careful, the pan will be hot.
