Chicken & Dumplings On a Budget I used: 3 chicken thighs (I recommend to remove the skin) 1 teaspoon of chicken seasoning 1 onion diced 1 carrot peeled & diced 1 carton of low sodium chicken broth 1 can of cream of celery (I recommend low sodium if possible) 1 can of cream of chicken (I recommend low sodium if possible)  1 packet of cheese garlic biscuit mix 1/2 cup of shredded cheddar cheese  I started by tossing my chicken thighs in a splash of oil and some chicken seasoning.   I seared those in my soup pot over medium high heat until browned on each side.   Remove the chicken and sautee the carrots and onions to deglaze the bottom of the pot.  Return the chicken, add in almost your entire carton of chicken broth but set aside 1/2 a cup for making the dumplings.  Cover this and simmer until the chicken is fork tender (approximately 25 to 30 minutes).  Remove the chicken and shred, return to the pot.  Recipe Note: this entire beginning process can be skipped if you have already cooked shredded chicken like a rotisserie chicken, in that case you would just sautee your carrots and onions, add in your shredded chicken and broth, and continue to the next step Add in your cream of celery and cream of chicken soup and let this simmer to bring everything together. While it simmers, mix your biscuit mix with cheese and the reserved chicken broth.  Drop small scoops of your dumpling mixture into your simmering soup trying to keep the drops separate and do not stir.  Cover and simmer for 12 minutes.
