Head to Woolworths to pick some Corinthians up before Christmas!  Ingredients Base  ⁃ 250g chocolate Corinthians  ⁃ 115g melted butter (might change depending on consistency of blended corinthians) Filling  ⁃ 2 tbsp gelatine  ⁃ 1/4 cup hot water  ⁃ 450g cream  ⁃ 500g cream cheese  ⁃ 1 1/4 cup sugar – 300g brownie (of your choice)  1. Crush corinthians in a food processor then add melted butter and mix until combined. Evenly press flat into a lined cake tin with a removable bottom. Create a border of vertical Corinthians around the inside of the tin like a wall, making sure its a tight ring so the filling doesn’t leak through. Leave in the fridge whilst you make the filling  2. Add cream to a bowl and add vanilla. Whip until stiff peaks form, set aside  3. In a separate bowl add cream cheese and beat until smooth. Whilst mixing, slowly add in sugar until fully incorporated. Dissolve gelatine in 1/4 cup hot water right before you pour it into the cream cheese bowl or it will lump up and not mix through  4. Once cream cheese mixture is fully combined gently fold in the whipped cream  5. Fold in chopped up brownie then pour on top of the base, smoothing the top and leaving in the fridge to set for a minimum of 6 hours but preferably overnight  6. Top with  more crushed corinthians before serving   #nobakecheesecake #chocbrowniecheescake #baking #christmasinspiration
