@theritualkitchen: Bored of the same old pancakes for Shrove Tuesday? This year I’ve adapted an 18th Century pancake pie recipe called a “Banniet Tort”. As someone who loves a pancake and loves a pie it sort of feels like I dreamt this one up myself but I swear it is a real recipe from days gone by. My version differs from the original somewhat in that I have gone for my thick and fluffy Lemon and Nigella Seed Olive Oil Spelt pancakes. I was surprised how good this came out! Here is the recipe - give it a try! 3 cups of flour 2 tablespoons of baking powder 1 teaspoon of salt 4 tablespoons of sugar 2 cups of milk 4 tablespoons of lemon infused olive oil 2 generous handfuls of nigella seeds Pastry 2/3 clementines Dried pineapple Mix dry ingredients, mix wet ingredients, fold togther but don’t over mix. Griddle pancakes and lay them into a deep dish that has been greased and lined with the pastry. Soak with clementine juice and add dried pineapple as desired.
