Ingredients for the sweet crust for a 24 to 30 cm tart:  * 250g flour * 25g almond powder * 140g butter * 100g icing sugar * 1 egg * 1 pinch of salt Steps to make the sweet crust : 1. Stir the butter (not melted!!) and icing sugar with a spoon until creamy. 2. Whisk in the egg and a pinch of salt. 3. Add the flour and almond powder and stir with a spoon until you obtain a ball of dough. 4. Flatten the dough with a rolling pin between two sheets of baking paper and form a circle (it will be easier to put it on your tart afterwards) and leave it to cool in the freezer while you make the almond cream. Ingredients for the almond cream: * 100g soft butter (not melted) * 100g sugar * 100g almond powder * 2 eggs * 20g flour Steps to make the almond cream: * Stir the butter (not melted) and sugar with a spoon until creamy. * Add the flour, almond powder and the two eggs and stir with a spoon. * Use straight away! Montage: 1. Butter and flour a 24 to 30cm tart tin, take the sweet dough out of the freezer and turn it over on the tin, then put it nicely all over the mould and cut off the exceeding ends of the dough (you can make biscuits out of it, it’s very good too). 2. When the sweet dough has covered the whole mould, pour the almond cream over it. 3. Peel 4 pears, cut them in 2 or 4 if they are large and arrange them on top of the almond cream. Then, with a fine knife, cut small lines in the pears. 4. If you wish, add slivered almonds. 5. Bake at 180 degrees for 45 minutes, until the almond cream has a nice golden colour. 6.
