Cod Fish Broccoli in a Creole Sauce over white Rice  1. 2 pounds of fish - I used Cod a white fish  2. 8 pieces garlic minced 3. 1/2 red and yellow bell pepper  4. 1 jalapeño diced  5. 1/2 onion diced  6. 2 tablespoons olive oil  7. 2 tablespoons butter  8. 1.5 cups broth  9. 1 cup of broccoli or any veggie  10. Optional- Parsley for garnish  11. Serve with Cooked white rice or mashed potatoes.  Fish Seasoning:  1. 1/2 teaspoon salt and black pepper- broth is salty so be mindful of adding salt.  2. 1 tablespoon Italian herb paste - blended herbs like parsley , basil , cilantro, oregano  3. 1 tablespoon paprika, creole seasoning , 1/2 teaspoon chili flakes  4. 2 tablespoons olive oil - use more to create a spreadable paste or add a bit if water if you don't want to use more oil.  5. 1 teaspoon dried parsley  6. Squeeze of lemon juice  1. Add all fish seasoning in a bowl.  2. Cut up your fish and season with the fish seasoning on all sides. Reserve 1 tablespoons to add into the sauce later.  3. Chop up your peppers, onions, jalapeño, and garlic.  4. In a large pan, add olive oil and sear the fish 1-2 minutes on both side then remove to a plate immediately. The fish will continue to cook in the sauce, so you do not want to overcook the fish now or it will fall apart.  5. Add butter ( and bit of oil if pan is dry ) and sauté veggies for one to two minutes on medium heat so that they are soft.  6. Add the remaining seasoning and slowly while mixing incorporate the broth .  7. Add in the broccoli.  8. Let the sauce cook for 1-2 minute and come together with all the seasonings on low to medium heat.  9. Taste and adjust the sauce as per your taste as far as seasonings.  10. At the fish back in gently. Garnish with parsley.  11.
