Former pro barista here. Finer grind makes your shots longer, but air temp, air pressure, humidity, and moisture content of your beans all play a huge role in shot time as well.

The faster, the RPM, the more you burn the bean, especially if the blade is metal plastic is better cracking. The bean is better than cutting it slow

It’s slower because it’s more compacted. Finer grains will create less aeration.

The grinders that grind better slower probably produce consistently larger grains compared to faster where it leads to smaller granules slowing flow.

James Hoffman found that the lower the RPM meant less finds, thus a more consistent grind. I tested this on my WW KEY, and I felt lower RPMs pulled better shots for my liking

RPM should only affect microfines and friction-induced temperature, which theoretically could affect grind size from thermal expansion and thus an uneven grind across the duration of grounds run thru

I has to do with the heat that is being created by the rpm’s. The lower the temps the better. That’s why spraying 4 pumps of water works better than 1
