@kimberlys_journey: Red Pesto Sausage Gnocchi - 1 pack of gnocchi - 4 reduced fat sausages - 1 sliced onion - 2 crushed garlic cloves - 1tbsp reduced fat red pesto - 200ml chicken stock - 100g sliced mushrooms - 20g parmesan - 2tbsp fat free creme fraiche - 30g mozzarella - Mixed greens (I used a leek and handful curly kale) De skin sausages, cut into smaller pieces and then add to a frying pan for a few minutes until they start to brown. Add in your onion, garlic & leek, fry until soft. Then add the red pesto and stir so eveything is combined. Add in the chicken stock, and stir again. If the sauce is too runny, add a little cornflour slurry (1tsp cornflour mixed with 2tsp water). Then add in your greens, I used curly kale. Let this wilt down a little, before stirring in the creme fraiche and uncooked gnocchi. Give everything a good stir, scatter cheese over the top and bake in the oven for 10-15 mins at 190. I didn’t boil the gnocchi first, I added it to my mince/ Ragu sauce.
