@linna.eats: I’m a SEATTLE girly so of course I’m making “Salt & Pepper Salmon.” 😏🤤 It’s crispy, tender & packed with extraordinary flavors! For years I’ve been making “Salt & Pepper” everythingg but missed one critical ingredient: SUGAR!! I love this space because it’s one helllluva teacher & a space to learn SO MUCH 🤗 I learned from my friend @stephvnietea who pretty much taught me that sugar is an essential ingredient && it isn’t made up of JUST salt and pepper (the less obvious name) 😅 It’s savory, spicy with a hint of sweetness! The addition of sugar definitely helps balance out the overall flavors! THANKS SENSAI CHEF STEPH 😘 INGREDIENTS: - 1.5 Ib of salmon cut into strips - 1 tbsp of granulated chicken bouillon - 2 tsp of ground white pepper - 1 tsp of sugar - 1 tsp of salt - 1.5 tsp of msg - 1 cup of cornstarch - 1 tsp of baking soda - 1 cup of egg whites - Oil for deep frying & to sauté - 2 tbsp of fresh minced garlic - 1 tbsp of oil for stir-fry - 1/4 cup of chives or green onions - 1/2 cup of sliced onions - Sliced Thai chili peppers INSTRUCTIONS: 1. To a bowl mix together salmon with: - 1 tbsp of granulated chicken bouillon - 1 tsp of ground white pepper - 1/2 tsp of sugar - 1/2 tsp of salt - 1/2 tsp of msg 2. Add baking soda & mix 3. Pour in egg whites 4. Add cornstarch & fully coat 5. Fill fryer with oil & set to medium/high heat 6. Once temperature reaches 350 degrees, add the salmon to the fryer 7. Fry for 5 mins 8. Strain & let it rest for 5 mins 9. Return the salmon back to the oil to twice fry 10. Fry for another 2 mins or until crisp & golden 11. Strain and add to a bowl 12. To another pan add 1 tbsp of oil & add minced garlic 13. Once garlic turns an amber color, add scallions, onions, remaining seasonings sauté for 30 seconds 14. Toss into the bowl of salmon & combine 15.
