I always just get water to just under a simmer, swirl the water and drop eggs in from a ramekin and test the yolk by poking it

if you put just a little bit of water at the bottom of a muffin tin and put them in the oven for like 6 minutes it makes perfect poachers

If you add 2 tablespoons of vinegar it will help keep the egg together if you just throw the whole thing in
