@bakesby.olivia: Lemon & Blueberry Layer Cake🫐🍋A delicious one bowl lemon cake laced with fresh blueberries, layered up with blueberry compote and zesty lemon buttercream! #fyp #recipesoftiktok #recipesforyou #recipevideo #cakerecipe #cakedecorating Ingredients: 3 large eggs 85g melted unsalted butter 90ml whole milk 120g buttermilk Zest and juice from 2 lemons 280g caster sugar 325g self raising flour 1 tsp baking powder Pinch of salt Fresh blueberries Frozen blueberries 50g caster sugar 375g unsalted butter 750g icing sugar 2 tbsp whole milk Juice from 1 lemon Method: - Preheat your oven to 160 degrees fan and grease and line 2 x 7 inch tins - Add all your wet ingredients into a bowl and whisk - Add in your sugar and whisk - Ad d in your dry ingredients and mix to combine - Pour into your tin and scatter your blueberries on top - Bake for 35-40 mins or until a skewer comes out clean - Make your compote by cookijg down your blueberries and sugar for 10 minutes on a medium heat and then allow to cool; i sieved out some of the excess liquid - let your cakes cool fully then make your buttercream by beating your butter for 5 mins until light and pale - Add in your icing sugar in 2 parts and then beat for another 3 minutea - Add in your milk and lemon juice and beat for another minute until smooth - Assemble your cake by slicing your sponges in half so you have 4 layers then sandwich them together with your buttercream and your compote Enjoy!
