Vietnamese Thit Kho Tieu (Caramelized Pork Belly with Black Pepper) Ingredients * 400 g pork belly (preferably from high welfare or sustainably raised animals) * 2 tbsp sugar * 2 garlic cloves, finely chopped * 1 fresh chili, finely chopped * 3 tbsp fish sauce (adjust to saltiness) * 150 ml water * 0.5 tsp black pepper, freshly ground * Jasmine rice (to serve) * 1 small cucumber, sliced (to serve) * Spring onion, thinly sliced (for garnish) * Extra fresh chili and black pepper (for garnish) Instructions 1. Cut pork belly into bite sized pieces. Sear in a pan until lightly browned. Remove and set aside. 2. In the same pan, add sugar and let it melt over medium heat until it turns into a light caramel. 3. Add chopped garlic and chili directly into the caramel and stir quickly. 4. Return the pork belly to the pan and coat it in the caramel mixture. 5. Add fish sauce and stir well. Pour in water and bring to a gentle simmer. 6. Cook until the liquid reduces slightly and forms a glossy sauce around the pork. 7. Remove from heat and season with black pepper. 8.
