 INGREDIENTS - 1 cup firmly packed, pitted medjool dates (approx. 12) - 1 cup rolled oats - 1/4 cup desiccated coconut, plus extra for rolling - 2 tablespoons ground flax seeds - 2 tablespoons tahini - 1 teaspoon vanilla extract - 1/4 teaspoon salt METHOD 1. Add all of the ingredients into a food processor and blend until they have broken down and start to stick together. Only if needed, add in a teaspoon of water to help the mixture come together. 2. Pour some extra desiccated coconut into a bowl. Roll the mixture into balls, then roll them in the coconut. Store in the fridge.
