Cook the rigatoni in salted water until al dente. Save some pasta water before draining. 2. Season the salmon with Everything Seafood Seasoning, Slap Ya Mama, salt and lemon juice. 3. Heat olive oil in a skillet and sear the salmon on both sides until cooked through. Remove it from the skillet and set aside. 4. Add the butter and diced onion to the same skillet. Cook until the onion starts to soften. 5. Add the garlic and tomato paste and cook for 1–2 minutes. 6. Pour in the white wine and let it cook down for a few minutes. 7. Add the heavy cream and let the sauce simmer until it starts to thicken. 8. Stir in the spinach and Parmesan. 9. Scoop out a little sauce and save it for the salmon. 10. Add the cooked rigatoni and toss everything together. 11. Add a splash of pasta water if the sauce gets too thick. 12. If you want the sauce thicker, make a quick roux with the butter and flour and stir a little into the sauce. 13. Add the salmon on top of the pasta. 14. Spoon the reserved sauce over the salmon. 15. Finish with freshly grated Parmesan and chopped parsley.
