@chefthombateman: Dinner Party Dishes - Episode 1. Tartiflette a gloriously simple dish from the French alps. It’s so comforting it’s crazy and can be prepared ahead of time so all you need to do is whack it in the oven if you’re entertaining. So the sticking point for most of us making this dish is the cheese, reblochon is not a supermarket staple in the UK. However you can source it online, I bought this one from Amazon. This is a hearty dish and with the bread and salad it should feed 3-4 people but I ate of half this to myself last night which is why I’ll never be skinny 1kg Charlotte potatoes 2 large onions 400g smoked bacon lardons 200ml dry white wine 300g creme fraiche 450g reblochon cheese Salt and pepper Garlic To serve - dressed salad, Crusty Baguette and Pickles (cornichons) 1. Boil the potatoes in salted water until fork tender allow to cool enough to peel them and slice into discs 2. Add the lardons to a pan and render out the the fat on a medium heat once crispy remove the pan leaving behind the fat. 3. Cook the onions in the bacon fat with a pinch of salt once caramelised add the bacon back in followed by the potatoes 4. Add the white wine and black pepper then reduce until hardly any liquid remains. 5. Stir the creme fraiche through the potato mix and taste for seasoning it may need salt. 6. Rub your oven dish with a garlic clove, add the potato mix then cover completely in thick slices of the cheese. Bake at 220c for 20-25 until the top is golden and oozing 7. Thats a pretty rustic version. Using new spuds dont peel. Thin sliced par boiled spuds, sauteed onion, layered with the lardons. Cream not creme fraiche. White vermouth works for wine too.
