Mix together dressing - 3 tbsp soy sauce - 1 tbsp Japanese sweet cooking sauce - tsp sesame oil - 1 tsp rice vinegar - 1/4 tsp / a dash garlic powder 3. Cube sashimi grade salmon & avocado, dice cucumbers finely - 180g salmon - 1 whole avocado - 1/2 cucumber 4. Pour 1 tbsp sauce over salmon, toss, pour lemon juice over avocado 5. Assemble in sequence - place rice, 2 tbsp cucumber, furikake, chilli flakes, avocado, salmon, slot few remaining pieces of avocado in, topped with more furikake and spring onions and toasted sesame seeds 6.
