This does look really nice but couldn't you just use the whole leek in the risotto? That's what I've always done, I don't understand why the top part might need to be cooked separately.

You can honestly use the tops anywhere,I’ve pan fried them on low fire with pancetta to put in a sandwich,I’ve put them in my shepherds pie as well, it’s truly versatile quite a pity if they’re thrown
