@emthenutritionist: a nutritionists eggcado dupe We all love Joe, and their new eggacado sandwich had to be recreated at home. Filling, full of protein, this will be on repeat. You can prep and hold this filling for 3 days. You will need to serve 1 323kcal and 21g protein for the filling 2 eggs 1 spring onion 1 heaped tbsp thick yoghurt (skyr style) 1 tsp sirracha 1 tsp American mustard lots of black pepper and salt to assemble 1 wholemeal pita 1 tomato, sliced fresh spinach 1/2 small avocado Bring a pan of water up to a boil, place the eggs in and set a timer for 8 minutes. Once done, plunge the eggs into a bowl of ice water for a few minutes, then peel. mix the eggs with 1 tbsp yoghurt, diced spring onion, 1 tsp sriracha, 1 tsp American mustard, lots of black pepper and a pinch of salt. taste and add more of any ingredient if you like. toast the pitta lightly, cut open and add a little spinach, a sliced tomato, some avocado and the egg salad mix and dive in. #joeandthejuice #highprotein #wieiad
