@rovinghaggis: 🏴󠁧󠁢󠁳󠁣󠁴󠁿 MARMALADE MERINGUE TART 🏴󠁧󠁢󠁳󠁣󠁴󠁿 I conceived this dish after making my marmalade. It was so delicious and I had so much of it I had to use it in a dessert recipe! Lemon meringue pie was a childhood favourite, mum made it a lot, so that was my inspiration. I have used my homemade curd and marmalade, but you can easily use shop bought, making this a very simple yet impressive dessert! Makes 12 tarts 1 x jar marmalade 1 x jar orange & lemon curd 1 pack rolled sweet shortcrust pastry 3 egg whites (I used the ones left from making the curd 🍊🍋) Equal weight of egg whites in caster sugar Pinch salt Eighth tsp cream of tartar Quarter tsp orange essence Take two cupcake trays and butter one underside and one inside. Cut your pastry into 12 discs and place over each cupcake shape on an upturned tray. Using your cookie cutter, gently place over the top to help the pastry take the shape. Cover carefully with the other cupcake tray so they are “spooning” 😜 Bake in oven at 180c (fan) for 15 minutes. Remove from oven and moulds, replace into 1 cupcake tray the right way round and open bake for another 5 minutes till golden all over. Remove to a rack to cool. Make the meringue by weighing the egg whites, then measuring out the same weight in sugar - mine was 96g of each. Add to a glass bowl with a pinch of salt and the cream of tartar. Whisk together then place over a pan of simmering water, whisking, until quite warm to the touch, when fingers rubbed together there is no residual graininess. Transfer to a stand mixer and start whisking slowly. Increase speed till glossy peaks are formed, add the orange essence and whisk through. Transfer to a piping bag with a flat nozzle. Lay your tart cases out, place a tsp marmalade in the centre of each, followed by a generous spoon of curd, top with the meringue then lightly blowtorch till they look like beautiful toasted marshmallows. These will keep easily for a week in the fridge, if they last that long! So good!! #lemon #tart #meringue #fyp #rovinghaggis
