Musakhan 🇵🇸 Juicy & crispy baked chicken served on top of sweet sumac onions and flatbread - this is one dish I’ve always dreamt of making. I couldn’t picture the taste initially in my head before making it but when I tried it - it tasted absolutely fantastic. everything just kinda works together 😋 and oh it’s also the national dish of Palestine! 🍉❤️
 INGREDIENTS: Spiced Onions:
- 8 yellow or red onions, chopped
- 1/2 cup olive oil
- 1/4 cup sumac
- salt and pepper to taste
- 1 tbsp. Baharat (7 spice) 
Musakhan Chicken:
- 5 chicken leg quarters
- 3/4 cup olive oil
- 2 tablespoons baharat (7 spice)
- 1/2 cup sumac
- 1 tablespoon minced garlic
- 1 teaspoon cinnamon
- 1 teaspoon cardamom
- Salt pepper to taste 
Toppings/Garnish: - parsley
- toasted pine nuts
- more sumac * Although the traditional recipe calls for Taboon bread, for this dish I made my own homemade flatbread to hold the chicken, but feel free to use any flatbread that you like! 

INSTRUCTIONS:
- Into a bowl, add in your chicken thighs along with a heaping amount of olive oil. In that same bowl add your sumac, minced garlic, cinnamon, cardamom, baharat and salt and pepper. Let it marinate for at least an hour.
- Add the marinated chicken into an oven-safe dish and bake at 375 F for 45-55 minutes or until the skin of the chicken is crispy
- For your spiced onions, into a pot on medium heat, add around 8 onions, thinly sliced along with olive oil, sumac, baharat and salt and pepper. Cook it down until soft and sweet. 
- Spread the soft and sweet onions on top of flat bread and add your cooked chicken. Top it off with parsley, toasted pine nuts and more sumac.
- Serve and enjoy!
