Ok rant over. This is not fully authentic, but these are a few ways I have learned to make better tasting curry at home. You can use this same recipe with green and red curry. I used the panang because it's the least spicy for the person I was cooking for. Galangal is another traditional aromatic in Thai cooking, but it is in the curry paste so I don't worry about adding more. My label fell off of my fish sauce so I know it's not super helpful, and I'm not sure the name because it was in Thai. It looks like the Tiparos branding, but it's different.
