No-bake cheesecakes are the best and this passionfruit one is ridiculously good: minimal effort, high reward. I will be back in the kitchen shooting new recipes for you this week after I didn’t manage to shoot anything on the busy weekend so for now, enjoy this oldie but goodie 🫶🏻 Ingredients 500g/ 2 cups cream cheese 270ml / 1 cup double cream 100g / 1/2 cup icing sugar 300g / 3 cups biscuits 100g / 1/3 cup unsalted butter 4 passionfruit Topping: 100ml whipped cream (optional) 2 passionfruit Instructions 1. Crush the biscuits into a fine crumb. Then add the melted butter and mix. Press the crumb into a deep 8-inch baking tin with a removable bottom. 2. In a standing mixer, whip the double cream until firm peaks. Then add the cream cheese and icing sugar. Whisk together until all combined. Cut your 4 passionfruits and spoon out the centre into the cheesecake batter. Fold through. 3. Add the filling to the the baking tin and even it out with a spatula. Leave to chill for a minimum of 5 hours in the fridge. I like to leave mine overnight. 4. When ready to serve: remove from the baking tin, whip your cream until firm peaks and spread on top of the cheesecake. 5. Add the remaining passionfruit all over the whipped cream and cheesecake and serve!
